Sweet Potato Grits

  Ingredients
  • 2 cups water
  • 2 cups almond milk
  • 1 cup stone ground grits
  • 2 medium sweet potatoes, peeled and grated
  • 2 teaspoons kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon


Directions
  1. In a large saucepan, bring the water and milk to a simmer over medium-high heat. Slowly whisk in the grits and stir in the grated sweet potatoes. Reduce the heat to low and simmer for 1 hour, stirring frequently to prevent clumps and sticking.
  2. Lastly, stir in the salt, pepper, olive oil, ginger and cinnamon. Serves 6.
