Golden Sautéed Plantain Slices

Ingredients

  • 3 large plantains, peeled and cut into ¼-inch slices
  • 3 tablespoons canola oil
  • Kosher salt

Directions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add enough plantain slices that will fit in a single layer, about 1 plantain. Sprinkle with salt and cook 4 minutes. Flip and reduce heat to medium. Sprinkle again with salt and cook an additional 4 minutes, or until plantains are golden yellow. Repeat process, using 1 tablespoon of oil per plantain. Serves 4.

     

    Cook's note: The skin of a sweeter plantain is dark brown, while the skin of a savory plantain is more yellow. Keep this in mind when choosing plantains at the grocery store. Sweet plantains can be drizzled with honey and taste similar to a banana, while savory plantains taste similar to potatoes and can be served with ketchup.
