Double-Chocolate Brownies

  Ingredients
  • ¾ cup (1 ½ sticks) unsalted butter
  • ¾ cup cocoa powder
  • 4 tablespoons canola oil
  • 2 cups sugar
  • 1 ¼ cups all-purpose flour
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups semi-sweet chocolate chips, divided

 

Directions
  1. Preheat the oven to 350 degrees and grease a 10-inch square pan.
  2. Melt the butter in a double boiler over low heat. Stir in the cocoa powder and oil. Pour mixture into a large bowl and let cool for about 5 minutes. Stir the sugar, flour, eggs, and vanilla (the mixture will be very thick). Stir in 1 cup of the chocolate chips.
  3. Pour the batter into the prepared baking pan. Sprinkle the top with the remaining chocolate chips. Bake for 30 minutes. Cool completely before cutting. Yields 16 brownies.
